Tomato and Roasted Red Capsicum Soup

A healthy, quick soup that the whole family will enjoy.

Cook Time 30 minutes
Total Time 35 minutes
Servings 4 people


  • Olive Oil for cooking
  • 800 g(Approximately) tomatoes, roughly chopped
  • 2 red capsicums chopped in half
  • 3 cups broth/stock of choice Instructions


  • Place capsicums on baking tray, cover with olive oil and roast until starting to blacken
  • Meanwhile cook tomatoes in olive oil until starting to soften
  • Add stock
  • Simmer for 10-15 minutes
  • Add roasted capsicums (chopped up)
  • Stir and simmer for a few minutes
  • Transfer to blender
  • Mix and return to saucepan
  • Simmer for a couple of minutes and serve immediately
