Tomato and Basil Soup

This soup is so quick and easy to make (especially if you already have cooked rice in the fridge waiting to be used up!) It is also a really cheap meal that the whole family will enjoy all year round. I used a mix of large and cherry tomatoes so go with whatever you can find-it will be just as good!

Servings 3 people

Ingredients
  

  • 1 tbsp olive oil
  • 3 cups fresh tomatoes
  • 3 cups vegetable stock
  • 1 cup loosely packed basil
  • 1 cup cooked white rice

Instructions
 

  • Heat olive oil in a large pan and add all tomatoes
  • Cook for approximately 5 minutes until softening and releasing juices
  • Add 3 cups stock and half cup basil
  • Once boiled, simmer for 5 minutes on low heat
  • Add cooked rice and simmer for another 5 minutes
  • Add rest of basil and transfer to a blender
  • Combine until all ingredients blended
  • Transfer back to pan, re-heat if necessary and serve

Notes

Serve topped with fresh basil or dried herbs
