Tomato, Almond and Coconut Soup

A quick and easy soup with minimal preparation needed. Packed full of flavour that the whole family will enjoy.

Total Time 20 minutes
Servings 4 people

Ingredients
  

  • Olive Oil for cooking
  • 5 cups roughly chopped tomatoes
  • 4 cups broth of choice
  • 1/2 cup almonds
  • 1/3 cup coconut milk

Instructions
 

  • Blitz almonds in food processor/blender
  • Add to pan and lightly toast (do not burn!) then place to one side
  • Add olive oil and tomatoes to pan and cook until starting to soften
  • Add broth to pan
  • Bring to boil then gently simmer for 10-15 minutes
  • Add soup, almonds and coconut milk to blender and blitz on high speed until all combined
  • Return to pan and serve immediately

Notes

Top with fresh herbs for added flavour
