Spicy Lentil Soup

This soup is easy to throw together with ingredients you’ll probably already have in your pantry. It is hearty and healthy and full of protein (about 13g/serve).

  • 1 onion, peeled and sliced
  • 2 cloves garlic, peeled and roughly chopped
  • 1 1/4 cups red lentils
  • 2 tbsp curry powder
  • 1 tsp cumin, garam masala, turmeric
  • 1 tin tomatoes
  • 2 fresh tomatoes, roughly chopped
  • 3 cups vegetable stock
  • 2 tbsp shredded coconut (plus more for topping)
  • 1 cup coconut cream


  • Heat olive oil in a large pan and sauté onions and garlic until soft
  • Add all spices and stir for 1-2 minutes
  • Add lentils, tomatoes and stock
  • Stir to ensure everything is mixed
  • Bring to the boil and then simmer for about 20 minutes until lentils are starting to get soft
  • Add coconut cream and continue to simmer until lentils are cooked completely (about another 5 minutes)
  • Stir in 2 tbsp shredded coconut


Serve immediately with a serving of poppadoms
Soup will thicken if left in fridge overnight. Can be eaten as a thicker stew or add some water to thin the soup slightly
