Sapote and Coconut Chia Pudding

Did you know sapote is also called the chocolate pudding fruit? The chocolate taste is very subtle but it is there-natural chocolate, yum ! Sapotes are high in vitamin A and potassium. They also contain good levels of Vitamin C.

Ingredients
  

  • 3 Black Sapote, peeled and de-seeded
  • 1 cup coconut milk plus extra for decoration
  • 3 tbsp shredded coconut
  • 1/4 cup chia seeds
  • 1 tsp maple syrup
  • 1 tbsp cacoa

Instructions
 

  • Add all ingredients to a high speed blender or food processer and blend until combined
  • Stir to ensure that none of the chia seeds are clumped together
  • Place the following layers into a bowl/glass: 1 tablespoon shredded coconut, 2 tablespoons chia pudding and top with coconut milk.
  • Continue until all mixture is used up
  • Place in the fridge for about 4-8 hours, ideally overnight

Notes

This recipe makes 4 small desserts. I enjoyed it for breakfast and got two serves out of it !!
