Tomato and Roasted Red Capsicum Soup
A healthy, quick soup that the whole family will enjoy.

Instructions
  1. Place capsicums on baking tray, cover with olive oil and roast until starting to blacken
  2. Meanwhile cook tomatoes in olive oil until starting to soften
  3. Add stock
  4. Simmer for 10-15 minutes
  5. Add roasted capsicums (chopped up)
  6. Stir and simmer for a few minutes
  7. Transfer to blender
  8. Mix and return to saucepan
  9. Simmer for a couple of minutes and serve immediately
