This soup is so quick and easy to make (especially if you already have cooked rice in the fridge waiting to be used up!) It is also a really cheap meal that the whole family will enjoy all year round. I used a mix of large and cherry tomatoes so go with whatever you can find-it will be just as good!

Ingredients
- 1 tbsp olive oil
- 3 cups fresh tomatoes
- 3 cups vegetable stock
- 1 cup loosely packed basil
- 1 cup cooked white rice

Instructions
- Heat olive oil in a large pan and add all tomatoes
- Cook for approximately 5 minutes until softening and releasing juices
- Add 3 cups stock and half cup basil
- Once boiled, simmer for 5 minutes on low heat
- Add cooked rice and simmer for another 5 minutes
- Add rest of basil and transfer to a blender
- Combine until all ingredients blended
- Transfer back to pan, re-heat if necessary and serve
