Ingredients
- Olive Oil for cooking
- 5 cups roughly chopped tomatoes
- 4 cups broth of choice
- 1/2 cup almonds
- 1/3 cup coconut milk

Instructions
- Blitz almonds in food processor/blender
- Add to pan and lightly toast (do not burn!) then place to one side
- Add olive oil and tomatoes to pan and cook until starting to soften
- Add broth to pan
- Bring to boil then gently simmer for 10-15 minutes
- Add soup, almonds and coconut milk to blender and blitz on high speed until all combined
- Return to pan and serve immediately
