Tomato, Almond and Coconut Soup
A quick and easy soup with minimal preparation needed. Packed full of flavour that the whole family will enjoy.

Instructions
  1. Blitz almonds in food processor/blender
  2. Add to pan and lightly toast (do not burn!) then place to one side
  3. Add olive oil and tomatoes to pan and cook until starting to soften
  4. Add broth to pan
  5. Bring to boil then gently simmer for 10-15 minutes
  6. Add soup, almonds and coconut milk to blender and blitz on high speed until all combined
  7. Return to pan and serve immediately

Top with fresh herbs for added flavour
