Spicy Lentil Soup
This soup is easy to throw together with ingredients you’ll probably already have in your pantry. It is hearty and healthy and full of protein (about 13g/serve).
Instructions
  1. Heat olive oil in a large pan and sauté onions and garlic until soft
  2. Add all spices and stir for 1-2 minutes
  3. Add lentils, tomatoes and stock
  4. Stir to ensure everything is mixed
  5. Bring to the boil and then simmer for about 20 minutes until lentils are starting to get soft
  6. Add coconut cream and continue to simmer until lentils are cooked completely (about another 5 minutes)
  7. Stir in 2 tbsp shredded coconut

Serve immediately with a serving of poppadoms

Soup will thicken if left in fridge overnight. Can be eaten as a thicker stew or add some water to thin the soup slightly
