Sapote and Coconut Chia Pudding
Did you know sapote is also called the chocolate pudding fruit? The chocolate taste is very subtle but it is there-natural chocolate, yum ! Sapotes are high in vitamin A and potassium. They also contain good levels of Vitamin C.
  1. Add all ingredients to a high speed blender or food processer and blend until combined
  2. Stir to ensure that none of the chia seeds are clumped together
  3. Place the following layers into a bowl/glass: 1 tablespoon shredded coconut, 2 tablespoons chia pudding and top with coconut milk.
  4. Continue until all mixture is used up
  5. Place in the fridge for about 4-8 hours, ideally overnight

This recipe makes 4 small desserts. I enjoyed it for breakfast and got two serves out of it !!
