Ingredients
- 1 1/2 cups cooked brown rice
- 3/4 cup chopped pineapple (fresh if possible)
- 1 small cucumber diced
- 1/2 cup bean sprouts OR spring onions
- 1/4 cup sliced kale
- 1/2 cup pepitas
- 1/4 cup fresh mint
Dressing
- 1/4 cup olive oil
- Juice of half lime (preferably fresh)
- 2 drops food grade lime essential oil* (optional but adds extra zing)*

Instructions
- Cook rice according to packet instructions and set aside to cool down
- Once the rice is cool add all ingredients and combine
- Combine all dressing ingredients together and mix into rice salad
