Ingredients
- 1 tin chickpeas, drained
- 1 red onion, chopped into small pieces
- 1-2 tbsp dulse flakes
- 1/4-1/2 cup egg free mayonnaise (see here for my recipe https://www.EagerForLife.com.au/recipe/egg-free-mayonnaise/)
- 1/4 cup pepitas
- 1/4 cup Sunflower Seeds
- 1/4-1/2 tsp dijon mustard
- 1 tsp Lemon juice

Instructions
- Place chickpeas in a blender and process until broken down (or mash by hand!)
- Place pepitas and sunflower seeds in blender and process until fine crumbs
- Place chickpeas and seed mixture into large bowl and add the red onion and dulse flakes to taste
- Mix together and add mayonnaise
- Add as much mayonnaise for the consistency that you require
- Add dijon mustard to taste
- Finally add 1tsp lemon juice
- Place in fridge to set or can serve immediately
Recipe Notes
Serve on fresh lettuce leaves or in bread for a tasty sandwich. Also great on jacket potatoes!
I like 2 tbsp dulse flakes which gives it a stronger fish type flavour
