Ingredients
Salad
- One large bowl mixed salad greens (different varieties lettuce/mustard greens etc)
- 2 small lebanese cucumbers, roughly chopped
- 2-3 spring onions (white and green part) finely chopped
- 1/4 cup basil finely chopped
- 1/4 cup chives, finely chopped
- 1/4 cup coriander, finely chopped
- 1 cup micro-greens (I used sprouted alfalfa seeds in this recipe)

Instructions
- Combine all salad ingredients in a bowl and mix
- Combine all salad dressing ingredients in a jar and shake to combine ingredients. Add to salad greens and thoroughly combine with salad utensils
Recipe Notes
Although this is a green salad, add cherry tomatoes for some extra variety and colour
Top with pepitas and sunflower seeds
