Ingredients
- 1 cup desiccated coconut
- 1 cup rolled oats
- 1 cup gluten free OR wholemeal spelt flour
- 1/2 cup coconut sugar
- 1/3 cup coconut oil (melted)
- 3 tablespoons maple syrup
- 1/2 tsp bicarb soda (baking soda)
- 2 tablespoons boiling water
- 1-3 tablespoons cold filtered water

Instructions
- Pre-heat oven to 180 degrees Celsius
- Mix together dry ingredients (Coconut, oats, flour, sugar) in a large bowl
- Melt coconut oil if necessary and combine with maple syrup
- Stir into dry ingredients
- Combine bicarb soda with boiling water and add to the mixing bowl
- Stir ingredients until combined. The mixture should be crumbly but easy to combine into balls. Add 1-3 tablespoons water if necessary
- Roll mixture into balls and place on lightly oiled baking tray
- Flatten with a fork dipped in water
- Bake for 15 minutes
- Cool on a wire wrack
Recipe Notes
Will last up to one week in an airtight container but I doubt that they will last that long!
