Chunky Anzac Biscuits
Anzac biscuits can be enjoyed any time of year, not just on 25th April. This version is chunky and pretty healthy for a snack. The oats are a great cholesterol lowering food so enjoy!

  1. Pre-heat oven to 180 degrees Celsius
  2. Mix together dry ingredients (Coconut, oats, flour, sugar) in a large bowl
  3. Melt coconut oil if necessary and combine with maple syrup
  4. Stir into dry ingredients
  5. Combine bicarb soda with boiling water and add to the mixing bowl
  6. Stir ingredients until combined. The mixture should be crumbly but easy to combine into balls. Add 1-3 tablespoons water if necessary
  7. Roll mixture into balls and place on lightly oiled baking tray
  8. Flatten with a fork dipped in water
  9. Bake for 15 minutes
  10. Cool on a wire wrack

Will last up to one week in an airtight container but I doubt that they will last that long!
