Ingredients
- 1 large bowl mixed salad greens (different varieties lettuce/mustard greens etc)
- 2 celery sticks, roughly chopped
- 1 bunch radish, roughly chopped
- 2 sliced spring onions
- 1 tin chickpeas (drained and rinsed)
Dressing
- 1/4 cup extra virgin olive oil
- 1/2 freshly squeezed lime
- 3 tbsp coconut vinegar (or 2 tbsp plus 1 tsp maple syrup)
- 1 tbsp Rice wine vinegar
- 1 tsp chia seeds
- 1 tsp hemp seeds*
Dash or black pepper and Himalayan salt

Instructions
- Combine all salad ingredients in a bowl and mix
- Combine all salad dressing ingredients in a jar and shake to combine ingredients. Add to salad greens and thoroughly combine with salad utensils
Recipe Notes
If not using all at once, it is best to add the salad dressing separately per portion to avoid the salad wilting in the fridge.
