I love jam spread on muffins, pikelets or banana bread but I really don’t like the amount of sugar that is added. I didn’t really realise this until I started to look at home made recipes and was so shocked. So I started experimenting to find the perfect spread with minimal added sugar and I found this to be perfect. You can adjust the addition of sweetner as per your taste.

Ingredients
- 1 cup blueberries
- 1 tsp lemon peel
- 1 tablespoon Lemon juice (fresh if possible)
- 1-2 tablespoons rice malt syrup
- 1 tablespoon chia seeds

Instructions
- Put half cup blueberries in blender and blitz
- Add these to the whole blueberries in a saucepan
- Add lemon peel, lemon juice and 1 tablespoon rice malt syrup
- Stir on low heat until whole blueberries start to break down (approximately 10 minutes)
- Remove from heat and mash mixture if a smoother 'jam' is desired
- Taste and add 1 tablespoon more sweetener if required
- Stir in chia seeds and leave for a couple of minutes
- Transfer to a jar and place in fridge to cool down before using
