After I completed a 33km trail ‘fun’ run over the weekend I felt I needed to nourish my body with lots of love and good food. And what better than pancakes, especially as it was a Public Holiday so the morning was really chilled. Chilled mornings and pancakes: they go together right? I really hope you enjoy these pancakes as much as I do.

Ingredients
- 2 very ripe bananas
- 1 cup non dairy milk
- 1 cup spelt flour
- 1 tsp Vanilla extract
- 2 tsp baking powder
- 1 tbsp coconut sugar
- 1 tbsp shredded coconut
- 1 tsp cinnamon powder
- 1 serving protein powder (I used Jimmy Blacks: www.bit.ly/jimmyblacksefl)
- Oil for cooking

Instructions
- Add all wet ingredients to blender followed by dry ingredients
- Blend until thoroughly combined
- Add oil to frying plan (I used olive oil)
- Add a good serving of pancake mix to pan
- Wait until bubbles have formed and flip over pancake
- Cook for approximately another 1-2 minutes
- Serve immediately
