Banana Protein Pancakes
After I completed a 33km trail ‘fun’ run over the weekend I felt I needed to nourish my body with lots of love and good food. And what better than pancakes, especially as it was a Public Holiday so the morning was really chilled. Chilled mornings and pancakes: they go together right? I really hope you enjoy these pancakes as much as I do.

Instructions
  1. Add all wet ingredients to blender followed by dry ingredients
  2. Blend until thoroughly combined
  3. Add oil to frying plan (I used olive oil)
  4. Add a good serving of pancake mix to pan
  5. Wait until bubbles have formed and flip over pancake
  6. Cook for approximately another 1-2 minutes
  7. Serve immediately

Top with maple syrup, caramelised banana, organic berries or nuts
