Are you vegan or have an egg allergy ? Or looking for an easy to make mayonnaise with ingredients that you would already have in the cupboard? This version is one I’ve been playing around with for some time, adapted from several recipes I found, trialed and tested. It’s taken a little bit of trial and error to find the perfect combination but I love it. It’s simple and easy. Don’t be put off by the amount of oil as I was at first. Rice bran oil is a great choice for this recipe….and have you ever looked at the ingredients list of mayonnaise you buy in the store? At least with this one you know exactly what is going in it!

I love this topping because it has become my plant based version of parmesan cheese without the nutritional yeast (which I am not a big fan of for health reasons-too much MSG/yeast extract).
So if you’re health conscious, plant based or dairy free this topping is perfect.
Easy to make and blends together within seconds.
It is great served on top of pasta, soups or vegetable bakes.
