Red Lentil and Mixed Bean Dahl

I’ve been working on my dahl recipe for ages.There has been a lot of tweaking to get it ‘just right’ and I finally feel that this is it! This is a wonderful, healthy, hearty meal which is great especially in winter. I usually make a big pot of it as it freezes really well. You can use any vegetables that you have in the house and the spiciness can be adjusted to suit the individual. Enjoy!

Celery Leaf Pesto

Ever wondered what to do with celery leaves? So did I, so I experimented in the kitchen and came up with a new pesto recipe. This is quick and easy to make and will keep for a few days in the fridge. I doubt it will last this long as it is great to have on hand as a healthy snack and will disappear in no time!

Blueberry Chia Jam

I love jam spread on muffins, pikelets or banana bread but I really don’t like the amount of sugar that is added. I didn’t really realise this until I started to look at home made recipes and was so shocked. So I started experimenting to find the perfect spread with minimal added sugar and I found this to be perfect. You can adjust the addition of sweetner as per your taste.

Marinated Mushrooms

This is a perfect anti-pasto to serve with drinks and nibbles at a BBQ, take on a picnic or for lunch boxes. It is so easy to make. The longer your marinade it for, the tastier the mushrooms will be!

Not Tuna Lettuce Cups

A tasty sandwich filler or appetiser which can be quickly made. Dulse is a type of seaweed that is high in iodine and manganese and provides the ‘fishy’ flavour in this dish. Use less if you prefer.

Dairy Free Cheese Sauce

I found a similar recipe to this a really long time ago. I’ve played around with it to make it perfect for my taste buds. There are lots of different versions of this sauce now but I love this one. It can be made as thick and creamy as you want (add less water, more cashews/vegan butter etc). It is perfect for so many dishes.

This recipe makes ‘a lot’ of sauce! I used this batch to make a big lasagne, vegetable bake and nachos!! I haven’t yet tried freezing it but will report back when I do as it would be great to have a supply of this handy for a quick dinner that the whole family will enjoy.
