Kelp Noodle Salad

Traditionally used in Asian cuisine, Kelp noodles are an amazing addition to your diet. They are very low in calories (anything from zero to six calories per pack) but very high in iodine which is commonly lacking in the Western diet. On their own they lack flavour and taste but this means that they absorb the flavour of any food that you put them with. They are also high in Vitamin K, Folate, Magnesium, Calcium, Iron and Manganese. One cup also contains 372mg sodium so beware if you are on a low sodium diet.

Curried Pasta Salad

A perfect summer salad that is filling and nutritious. Easy to make and makes a big batch to get you through the week’s lunches. Or serve as a side dish with your main meal.

Egg Free Mayonnaise

Are you vegan or have an egg allergy ? Or looking for an easy to make mayonnaise with ingredients that you would already have in the cupboard? This version is one I’ve been playing around with for some time, adapted from several recipes I found, trialed and tested. It’s taken a little bit of trial and error to find the perfect combination but I love it. It’s simple and easy. Don’t be put off by the amount of oil as I was at first. Rice bran oil is a great choice for this recipe….and have you ever looked at the ingredients list of mayonnaise you buy in the store? At least with this one you know exactly what is going in it!

Potato Salad

This is my version of a Jamie Oliver recipe with an Eager twist to it! Potatoes are such a good, healthy, nourishing food packed full of so many nutrients. And this salad is perfect for the summer months at a picnic or as a side dish at home to a main meal. Enjoy.
