Egg Free Mayonnaise

Are you vegan or have an egg allergy ? Or looking for an easy to make mayonnaise with ingredients that you would already have in the cupboard? This version is one I’ve been playing around with for some time, adapted from several recipes I found, trialed and tested. It’s taken a little bit of trial and error to find the perfect combination but I love it. It’s simple and easy. Don’t be put off by the amount of oil as I was at first. Rice bran oil is a great choice for this recipe….and have you ever looked at the ingredients list of mayonnaise you buy in the store? At least with this one you know exactly what is going in it!

Ingredients
  

  • 1/2 cup soy milk
  • 1 tsp dijon mustard
  • 1/4 tsp sea salt
  • 1/2 tsp garlic, finely chopped
  • 1 tsp rice malt syrup
  • 2 tsp apple cider vinegar
  • 1 cup rice bran oil

Instructions
 

  • Add first 6 ingredients to blender and blend until completely mixed
  • With the blender still running, add the rice bran oil and continue to blend until mixture is thick

Notes

Add more garlic for a delicious garlic aioli style dip!
