Chunky Anzac Biscuits

Anzac biscuits can be enjoyed any time of year, not just on 25th April. This version is chunky and pretty healthy for a snack. The oats are a great cholesterol lowering food so enjoy!

  • 1 cup desiccated coconut
  • 1 cup rolled oats
  • 1 cup gluten free OR wholemeal spelt flour
  • 1/2 cup coconut sugar
  • 1/3 cup coconut oil (melted)
  • 3 tablespoons maple syrup
  • 1/2 tsp bicarb soda (baking soda)
  • 2 tablespoons boiling water
  • 1-3 tablespoons cold filtered water


  • Pre-heat oven to 180 degrees Celsius
  • Mix together dry ingredients (Coconut, oats, flour, sugar) in a large bowl
  • Melt coconut oil if necessary and combine with maple syrup
  • Stir into dry ingredients
  • Combine bicarb soda with boiling water and add to the mixing bowl
  • Stir ingredients until combined. The mixture should be crumbly but easy to combine into balls. Add 1-3 tablespoons water if necessary
  • Roll mixture into balls and place on lightly oiled baking tray
  • Flatten with a fork dipped in water
  • Bake for 15 minutes
  • Cool on a wire wrack


Will last up to one week in an airtight container but I doubt that they will last that long!
