Chocolate Almond Chia Pudding

A decadent chia pudding that can be eaten any time of day-even for breakfast. Chia seeds are so nutritious and will fill you up. A great way to start the day.
Servings 2 people

Ingredients
  

  • 1/4 cup chia seeds
  • 3/4 can coconut milk (or other plant based milk)
  • 3 medjool dates
  • 1 tsp vanilla essence
  • 1-2 tbsp almond butter
  • 1-2 tbsp chocolate spread (I use coco2 by Pure Harvest which is Coconut, Cocoa and Almond)

Instructions
 

  • Add milk, dates, vanilla essence, almond butter and chocolate spread to a blender and mix until thoroughly combined
  • Stir through chia seeds
  • Leave on kitchen counter and regularly stir for the next hour ensuring no chia seeds are clumped together
  • Place in bowls/glasses and place in fridge overnight to set

Notes

To serve top with berries and coconut
