Chickpea and Quinoa Salad

This is a quick salad if the quinoa is already made. Make a big batch next time you have some for dinner and store in the fridge ready to make salads for lunches etc.

Servings 4 people


  • 1 cup cooked quinoa
  • 1 can chickpeas, drained and rinsed
  • 2 tomatoes, roughly chopped
  • 1/2 cup cucumber, roughly chopped
  • 1/4 cup green beans, chopped into small pieces
  • 1/4 cup spring onions-green parts only
  • 1/4 cup fresh mint
  • 1 tsp dried coriander


  • 1/2 teaspoon red pepper flakes
  • 1/4 cup olive oil
  • 1 fresh lime-juice only
  • 2-3 drops food grade lime essential oil* (if possible as adds extra zing)
  • *Please note that I only use and recommend doTERRA essential oils


  • Add quinoa into bowl
  • Combine all salad ingredients including chickpeas
  • Mix thoroughly

Salad Dressing

  • Combine all ingredients together and add to salad just before serving
