Celery Leaf Pesto
Ever wondered what to do with celery leaves? So did I, so I experimented in the kitchen and came up with a new pesto recipe. This is quick and easy to make and will keep for a few days in the fridge. I doubt it will last this long as it is great to have on hand as a healthy snack and will disappear in no time!
- 1 1/2 cups celery leaves, loosely packed
- 1/4- 1/2 cup basil, loosely packed
- 1/4- 1/2 cup olive oil
- 1 clove garlic, chopped
- 1/4 cup walnuts
- 1/4 cup pumpkin seeds
- 1 tbsp lemon juice
- Place all ingredients into blender and combine until mixed. Blend for less time if you would prefer a chunkier pesto.
Great with pasta, zucchini noodles or as a dip.
