Looking for a healthier alternative to cream or are you vegan or lactose intolerant? Look no further as cashew cream is the perfect answer. Easy to make and guaranteed that the whole family will love it. Perfect spread on cakes, muffins or stewed apples-so many options. .
- 1 cup cashews
- 1/2 cup filtered water
- 1 tsp vanilla essence
- Optional: Dates
- Soak cashews overnight
- Rinse and add to high speed blender with 1/2 cup water and vanilla essence
- Combine until you have a smooth mixture with no lumps
- Place in fridge to cool or serve immediately if wanting a warmer 'cream'
Please note that cashews do not need to be soaked but will blend easier and give a creamier taste if soaked for at least 1-2 hours first. I prefer overnight If you would like a sweeter cashew cream add one or two medjool dates to the mixture before you blend *1 cup nuts to 1/2 cup water gives a thinner consistency cashew cream suitable for spreading. If you wish to have a thicker cream, add less water.
