Berry Chia Pudding

Chia puddings are so versatile and can be eaten any time of day. They are the perfect healthy snack. This recipe only has three ingredients: coconut milk, chia seeds and berries. It does not require any extra sweetness added because of the frozen berries. The flavour is sweet and creamy and will be sure to satisy even the fussiest of eaters!

  • 1/4 cup chia seeds
  • 400 ml coconut milk
  • 1/3 cup frozen mixed berries (plus extra for layers)


  • Combine coconut milk and berries in a blender and mix until combined
  • Add chia seeds and stir
  • Leave on kitchen counter and regularly stir for the next hour ensuring no chia seeds are clumped together
  • Place in fridge overnight to set
  • Remove from fridge and transfer to serving dish
  • Add a layer of berries followed by chia seeds until all mixture is used
