Banana Protein Pancakes

After I completed a 33km trail ‘fun’ run over the weekend I felt I needed to nourish my body with lots of love and good food. And what better than pancakes, especially as it was a Public Holiday so the morning was really chilled. Chilled mornings and pancakes: they go together right? I really hope you enjoy these pancakes as much as I do.

Cook Time 10 minutes
Total Time 15 minutes
Servings 2 people

Ingredients
  

  • 2 very ripe bananas
  • 1 cup non dairy milk
  • 1 cup spelt flour
  • 1 tsp vanilla extract
  • 2 tsp baking powder
  • 1 tbsp coconut sugar
  • 1 tbsp shredded coconut
  • 1 tsp cinnamon powder
  • 1 serving protein powder (I used Jimmy Blacks: www.bit.ly/jimmyblacksefl)
  • Oil for cooking

Instructions
 

  • Add all wet ingredients to blender followed by dry ingredients
  • Blend until thoroughly combined
  • Add oil to frying plan (I used olive oil)
  • Add a good serving of pancake mix to pan
  • Wait until bubbles have formed and flip over pancake
  • Cook for approximately another 1-2 minutes
  • Serve immediately

Notes

Top with maple syrup, caramelised banana, organic berries or nuts
